Flavour, it turns out,
was keeping time all along.

The pairings that feel obvious are mostly seasonal: things that ripen in the same place at the same week share the same compounds, so what grew together tastes like it belongs together.

For most of history that was the whole logic of a plate. You cooked what was ripe, and it matched because it had to. Then a food system built to deliver anything in any month flattened the calendar, and the pairings kept tasting familiar while the reason behind them went quiet.

This essay follows that thread: what the severing costs, whether the knowledge can be taught back, and why any of it might be worth fixing.

Flavour as Timekeeping Intelligence

As a recipe editor for one of Switzerland's largest supermarket groups, most days the question is which ingredients belong on a plate together, a craft built on intuition and on what I assume the reader already accepts. But the assumption is doing more work than the craft. Some pairings feel inevitable. Peas and mint is the one everyone reaches for: the home cook stirring mint into a pea soup to lift it, the three-star kitchen plating a pea sorbet against a mint gel. Same instinct, different altitude. These are not inventions. They are recognitions. Two plants that ripen together, in the same short weeks, tend to carry the same aromatics. Their flavours match because their lives coincided. This is not poetry. It is phenology and biochemistry agreeing.

The Logic of Co-Occurrence
We know tomato and basil. The pairing is so canonical it has become a default, ordered without a thought. But the default hides its own reason. Nobody asks why those two, because the answer was never on the plate; it was in the ground they came from, one bed, one sun, the same minerals pulled up at the same depth. The taste is the record of the growing. We just stopped reading it as one.

Once you start looking for this, the canon expands. Lovage and a late heirloom tomato in a kitchen garden at the end of summer, botanically unrelated but both at peak green-leaf chemistry. Elderflower and gooseberry in the June hedgerow, their floral terpenes arriving across the same few days. Quince and bay in the orchard's autumn corner. Cucumber and dill from one summer row. These are agronomic facts hiding inside what looks like culinary preference. Terroir, used properly, names exactly this, how soil, climate, aspect and biology converge into something you can taste, though wine marketing has flattened the word into a vague claim of place.

The cross-seasonal pairings are the ones almost no one tries. Roasted pumpkin and blackberry is extraordinary, sweet earth against dark acid, and it rarely occurs to anyone to put them together. The reason it works is simple: their growing times overlap. For one short stretch the wild berry is still on the cane as the pumpkin comes ripe, and for that window they belong to the same season. Roast the seed and it holds. Ferment the berry and it holds. The logic lives in the overlap, not the form on the plate.

How the Calendar Was Flattened
None of this happened by accident. The year-round calendar was assembled, in large part, from the residues of twentieth-century warfare. Synthetic nitrogen fertiliser scaled up from munitions plants that could not be allowed to close after 1945. Organophosphate pesticides descend directly from nerve agents developed in the 1930s. The post-war American supermarket arrived in Europe under Marshall Plan logic, bringing standardised cultivars, controlled-atmosphere storage and the global logistics of a food system built on the bones of an older one.

Naming this is not grievance. It is to insist that the flat calendar in front of us is neither natural nor inevitable. It was built. A January tomato and a January basil leaf on the same plate are no longer co-occurring; they are co-arriving, having travelled separately from soils and harvest weeks that match neither each other nor ours. The flavours still register as familiar. The information has gone silent.

Learning to Taste
And yet the information is not entirely lost. We still recognise the pairings. We still feel that lovage belongs with tomato, that quince belongs with bay, even when we have no idea why. The knowing is older than us, transmitted through grandmothers, cookbooks, the imitations of imitations of a peasant cuisine most of us have never lived inside. The literacy survives in fragments, mostly unattributed.

Last winter, in a test kitchen, we were working on a brief asking for Swiss ingredients pushed toward something exotic. We landed on a panna cotta scented with barley and rose: the barley cooked into the cream and milk to infuse it, rose essence carrying the perfume. The pairing felt foreign in the way the brief wanted. Cognitively, for us, rose belongs to muhallabia, to Persian sweets, to a culinary geography that is not ours. Halfway through testing, the recognition arrived. The rose is not foreign here. The wild rose flowers pink on every hedgerow in June, and by autumn the same plant hangs heavy with hips, boiled into tea and jam in this country for as long as anyone can name. Barley has been an alpine staple for centuries. The dish was not exotic; it was the most local thing we had made that week. The strangeness was a habit of perception, not a fact of place. That was the moment I understood that flavour literacy is not only about when ingredients arrive. It is also about which ingredients we have stopped claiming as ours.

Most of my working week does not allow this kind of attention. Recipe development inside a supermarket system runs on a productive constraint: a brief, a catalogue that barely turns with the season, a target cost, a target reader buying everything in one shop. The constraint sharpens the craft but forecloses on the other thing. It cannot say where the ingredients grew, or when, or near what. It cannot place lovage beside the tomato, because the supermarket does not stock lovage; lovage does not ship. The system that disciplines the craft also flattens its politics. This asymmetry is not a complaint. It is the condition the essay is written from.

This is changing, more than I expected. Produce that sat on the shelf year-round five years ago now disappears for months at a time; the seasonal gap is quietly returning. And yet in certain shops the strawberries and asparagus still arrive in December, ready for a Christmas dinner they were never part of. That is not supply. It is demand, created, manufactured and met.

This is what I mean by pairing as instrument. The combination on the table does work no explanation can do. Two ingredients side by side carry their own argument: you smell them together, you taste them together, and the sensory register sharpens in a way descriptive prose cannot replicate. A blackberry beside a pumpkin seed is a piece of October you can hold. A bowl of barley milk scented with rose is a place made legible without a single explanatory word. The cook who places these together is not just making food; she is putting an instrument in front of the eater, one that tunes the senses to seasonal time. A single well-built pairing, met with even a sentence of context, can do in twenty seconds what an essay struggles to do in a thousand words. What gets noticed, gets noticed for good.

A Politics of Taste
If flavour literacy is teachable, and if one good pairing can carry it faster than any explanation, then the question stops being whether to fix the food system from policy or agriculture. Those are necessary fights, being fought by people more qualified than me. The question is whether enough people can be sensitised to taste what the industrial calendar costs them. The system depends, in the end, on people not noticing: the imported strawberry still tastes like a strawberry, the greenhouse tomato still tastes like a tomato. Just enough. Enough not to revolt. It is the practice of restoring the resolution at which that loss becomes obvious. A population that can taste the difference between a January tomato and a September one is a population that votes, shops and cooks differently. Sensory literacy is not a substitute for politics. It is the substrate politics needs.

Reading the Table Backwards
Tomato and lovage, elderflower and gooseberry, quince and bay, peas and mint, roasted pumpkin and blackberry, rose and barley: each pairing a small record of a microclimate, a moment, a coincidence the cook noticed and the tradition kept. Flavour is the last legible language of agronomic time. The pairings we still trust are the surviving documents of a food culture that ran on other terms. The work is to learn to read them, to teach others to, and to put them on tables where that knowledge can do its job. Not as nostalgia, not as wellness, but as literacy.

The harder part is everything after. It is one thing to know this, another to hand it to someone standing in an aisle in January with a trolley to fill. Closing that distance is what comes next.
